Most of the grain
Once the husk is off, the endosperm makes up roughly nine-tenths of the grain by weight. The bran and germ are the thin remainder, which is why polishing them away loses so much fibre so quickly.
Medium sticky · Everyday rice · Maharashtra
A fragrant, medium-sticky everyday rice from one village in Maharashtra. Its gentle aroma fills the kitchen as it cooks, and we take off the husk and nothing else, so the bran stays on, with all the fibre it carries.

Most rice is polished until it’s white. Polishing takes the bran with it — and the bran is where the fibre, vitamins and minerals were. So we stop at the husk.
Inside its husk, a grain of rice has three parts. Polishing scrubs away the bran and the germ. We leave them where they are.
Tap or hover a layer to find it in the grain.
The endosperm is the grain’s store of food for a new plant, and the part of rice you eat most of. It is almost all starch, and the kind of starch decides how the rice cooks.

Amylose cooks into firm, separate grains. Amylopectin swells and turns soft and clinging. Every rice variety has its own balance of the two.
Pure Bites sits in the middle: soft grains that hold together lightly without turning gluey. That is what makes it an easy everyday rice, and why washing it 2–3 times keeps it just right.
The endosperm is where most of the grain’s energy and much of its protein sit. Eaten on its own, as white rice, it is digested quickly. Wrapped in its bran and germ, it is digested more slowly.
Pure Bites is a naturally aromatic rice. The fragrance is in the grain itself, nothing is added, and because we never polish it, the bran adds a warm, gently nutty note of its own.
A soft, clean, grainy scent, the first sign this is not ordinary white rice.
The fragrance rises with the steam and fills the kitchen. This is when it is strongest.
Warm and slightly nutty from the bran. Rest it five minutes, covered, and the aroma settles into every grain.
Only the husk comes off. The bran and germ stay on.
10 g of dietary fibre in every 100 g. Fibre keeps digestion regular and helps you stay full for longer, and rice bran feeds the good bacteria in your gut.
With its bran intact, the grain is digested more slowly than polished rice, so its energy is released more steadily.
A small-grained, naturally fragrant variety from a single village. Open the pack and you will notice it; cook it and the whole kitchen will.
Rice bran also carries natural antioxidants. This is general information, not medical advice; if you have diabetes or another condition, ask your doctor how rice fits your diet. The curve is illustrative, not measured data.

Medium sticky, soft and easy to eat every day, happiest next to dal, sabzi and curry.
Rinse in cold water until it runs almost clear. This is what keeps the grains from turning too sticky.
The bran is still on, so a short soak helps the grain cook evenly and softly.
About 2 to 2½ cups of water per cup of rice. Simmer covered for 20–25 minutes, or 3–4 whistles, then rest 5 minutes.
Only the husk is removed. Polished rice is milled further until the bran and germ are gone. Keeping them gives you more fibre, vitamins and minerals, a natural colour and a nuttier taste.
Medium sticky: soft and slightly clinging, not gluey, which is why it works as an everyday rice. Washing it 2–3 times before cooking keeps the grains more separate; wash it less if you like it softer.
Yes. It is a naturally aromatic variety, and the fragrance comes from the grain itself, with nothing added. It is gentle rather than perfumed: warm and slightly nutty from the bran, strongest while it cooks and in the first minutes after you lift the lid.

Rice is naturally gluten free. “Sticky” describes the texture, not gluten.
Reseal the pouch and keep it somewhere cool and dry, out of sunlight. Because the bran is left on, it is best used within a few months of opening.
